Pesto Pasta w/portabellas, tomatos and sausage
This is much better than the parsley pesto we made last month but that’s just because basil is so much more fragrant than parsley. I used Ina Garten’s pesto recipe but used only almonds instead of walnuts and pine nuts. Nuts aren’t cheap but we always have almonds in the pantry to add crunch to our usual spinach salads. I loved this pesto recipe and already have plans to use it again! We will be hosting a cookout for friends and family on the rooftop during graduation weekend. This is an easy thing to prepare in mass quantities on the day of the party.
I used a half recipe of the parsley pesto for 3/4 of a pound of whole wheat rotini and added:
- 2.5 sliced & pan-fried chicken andouille sausages from Trader Joe’s (probably 1 more sausage than necessary but I wanted to finish the package)
- fresh diced tomatos
- 2 chopped & sauteed portabellas (could definitely use more next time)
- the next day, I added a chopped, sauteed zucchini to the mix (adds a nice, fresh crunch!)
