Bacon Jam Pizza

Sure, it looks like all of our other pizzas…and basically, it is. However, underneath is some deliciously smoky bacon jam. I guess I would describe it as a bacon and onion compote. Yes, it kind of looks like dog food when you’re spreading it on, but its makes a nice bacon & onion base to your pizza:

Gruyere would have been nice on top with just a few olives…but what we had laying around was some chicken andouille, mushrooms, and quattro formaggio. Well, that’s hopefully it on the pizzas for a bit…we just bought too much dough for the Super Bowl and were trying to use it before it went bad. I’ve been roasting a chicken about once a week and have figured out a lot of uses for it, which I’ll share at some point. Moving forward, I’m going to try to experiment by cooking more with seafood. I am comfortable with shrimp and catfish but don’t really cook much else. We’ll see how much living in Chicago impacts my quest to cook seafood…
